Last Minute Saint Patrick’s Day Dessert Ideas

I had grand plans to send greetings from Savannah, GA today before I began celebrating and painting the town green. Instead, I’m struggling to defeat a terrible cold. Since I’m feeling a little blue, I thought the least I could do was share a little green cheer with you today.
You may be wondering what you can possibly whip up today to celebrate Saint Patrick’s Day…well here are a few quick and easy last minute dessert that you can create with minimal effort and a BIG payoff.
Cupcakes: Easy to make and you can use any cupcake base. Simply decorate with green and/or white frosting and add a few sprinkles or candies.
Popcorn: You likely have most of the necessary ingredients in the pantry.
Cookies: Whip up a batch (or purchase refrigerated dough) and decorate with royal icing and sprinkles or incorporate candies in the dough before baking.
Whoopie Pies: Made with cake mix and embellished with Lucky Charms. How neat is that? I’m sure your little ones would be thrilled to help create these.
Pretzels: Another child-friendly treat that you can make in minutes. These are a spin on the Mock Turtles I posted about in January.
